How to Use Your E5 Sharpener


SHARPEN

  1. Start with the Red Belt and cycle through SHARPEN stage.
  2. Test knife for sharpness. If not sharp, move to on SHAPE stage.
  3. Repeat in SHAPE stage until sharp.

MAINTAIN (ONCE OR TWICE PER WEEK)

  1. Use CERAMIC HONING ROD or cycle through REFINE stage.

How to Use Your M3 Sharpener


SHARPEN

  1. With the DIAMOND ROD attached, make 5 strokes on the same side.
  2. Check for a burr. If no burr is raised, repeat 1st step until there is a burr along the entire blade.
  3. Once a burr is raised, repeat the same number of strokes on the other side of the blade.
  4. Install the CERAMIC ROD and align the ribbed side with the angle guides. Make 10 strokes, alternating sides.
  5. Rotate the CERAMIC ROD to align the smooth side with the angle guides. Make 10 more strokes, alternating sides.

MAINTAIN (ONCE OR TWICE PER WEEK)

  1. Install the CERAMIC ROD and align the smooth side with the angle guides. Make 10 strokes, alternating sides.

15° Eastern Recipe

SHARPEN

  1. Start with the Grey BELT and cycle through Sharpen stage.
  2. Change to White Belt and cycle through Sharpen stage.
  3. Test knife. If not sharp, move to REPAIR AND RESTORE recipe.

MAINTAIN (ONCE OR TWICE PER WEEK)

  1. Use the White Belt and cycle through REFINE stage.

20° Western Recipe

SHARPEN

  1. Start with the RED BELT and cycle through Shape stage.
  2. Change to Grey Belt and cycle through SHAPE stage.
  3. Test knife. If not sharp, move to REPAIR AND RESTORE recipe.

MAINTAIN (ONCE OR TWICE PER WEEK)

  1. Use the Grey Belt and cycle through REFINE stage.

Create a MicroForge Edge


Our exclusive MicroForge feature cold forges micro facets into the cutting surface, extending the life of your blade between sharpenings, increasing cutting control, and creating more durability.

You should only apply the MicroForge edge 1-2 times per year. Maintain your MicroForged edge with standard honing using the CERAMIC HONING ROD or the REFINE stage on the E5.

  1. First, sharpen your knife on an E5 or M3 sharpener.
  2. Remove the Ceramic or Diamond Rod from the handle.
  3. Hold the handle vertically, resting the base on a cutting board.
  4. Place the tip of the blade into the MicroForge slot and hold the knife parallel to the cutting board.
  5. Apply moderate force and slowly PUSH the entire knife through the slot.
    (Similar to the pressure required to cut a sweet potato, approximately 4 lbs.)
  6. Now hone the blade by reinstalling the ceramic rod into the handle, with the fine, smooth side lining up with the guides.
  7. Make 10 slow, alternating strokes.
